"The Best Product" and "Innovative Product" — EFKO Oils and Fats Division returned from PRODEXPO 2024 with gold medals in two competitions. Summarizing the results of participation in the international food exhibition.
More than 2 thousand participants from 40 countries and nearly 70 thousand visitors. Dozens of meetings, negotiations and presentations of novelties. The International Exhibition of Food Industry PRODEXPO — 2024 has ended in Moscow.
Technologists and managers of the EFKO Group worked at the stand of the Oils and Fats Division — they advised representatives of confectionery, bakery and dairy companies on the choice of ingredients and development of new recipes.
Participating in the exhibition is another reason to see our dear partners with whom we have been working for many years. And, of course, an opportunity to meet new producers and introduce them to our ingredients.
One of the most important events at PRODEXPO are the Best Product and Innovative Product Competitions. Producers always compete for these awards, which are among the most prestigious in the food industry.
Three of our products received the "Best Product" award at the same time: the novelty of the year 2024 — confectionery fat "Econat 4704-35" for fillings and pastes, MT margarine "Ecouniversal 3003-32" for flour confectionery products and fat for lubricating molds, which prevents dough from sticking to molds and baking trays.
Confectionery fat "Econat 4704-35" is a unique fat in the premium segment. Thanks to the use of shea butter in its composition, it enhances the flavor of nuts and dairy ingredients, gives finished products a delicate creamy consistency and ensures easy spreading of pastes in a wide temperature range. All this allows manufacturers not only to improve the current assortment, but also to create completely new candies that have never been on the market before.
Margarine "Ecouniversal 3003-32" helps to make perfect crumbly shortbread, puffy muffins, soft gingerbread and fluffy cookies. All this is due to its high aeration properties and stable texture. We have achieved these properties by using high-tech methods of fractionation and blending of vegetable oils.
Fat for lubricating the molds completely solves the problem of dough sticking.
“Char is a problem that every baker is familiar with,” explains Svetlana Babicheva, Chief Technologist of the EFKO Group. — At the baking temperature of 220-270°C, oil burns out — baking molds and baking trays get covered with a dark film. This leads to deformation of bread, hinders unloading of molds, worsens heating and increases the time of baking. Our fat for lubrication works as a non-stick and release agent. It reduces the adhesive force between the dough piece and the mold and prevents sticking. A thin layer of the product is enough — the product will be easier to take out of the molds and remove from the baking trays. The aroma and taste of the baked goods will not change and the baking molds and trays will last longer”.
Our margarine "Ecopie 1903-38" for shortbread dough won the highest prize in the "Innovative Product" competition. It has proved its worth in the production of shortbread cookies on mechanized lines. Its use allows to obtain elasticity of the dough — it can be rolled to extremely thin thickness, as well as achieve rich creamy taste and aroma.
